All set to close & be homeowners. By 3pm those day before jitters were turned into disappointment and discouragement. We are buying a house in one county and our realtor & title company are in another county. Apparently this is frowned upon. Or, perhaps that county tax office always sucks. <br />The afternoon of July 2nd our survey finally made its way in and, to everyone's shock, showed only 1acre, not the 2.29 acres. So I went & eyeballed those orange flags, making sure someone wasn't trying to Jim me out of half what we agreed to purchase. Nope, it's all included. Turns out that a lot of people have no clue what an acre looks like, or the difference in size of 1 or 2.29. So it's 1acre. I've always wants more,lots more, more is better. So, even though this is everything I originally saw, I'm a bit disappointed its not the 2.29. But it's not a deal breaker to me, or us. <br />So now we have to get a new appraisal, tax amendment, submit to my lender & then close. This could take awhile, because, I assure you, no one is willing to rush to help you out, no matter what the situation is. We, however, put in our 30 days notice, and have to be out by the 13th. This house is already rented to a new family. <br /><br />On a different matter, I was kind of offered a job making great money, like 60-80k a year money. To us, that is amazing money, more than my husband makes kind of money. Now, my husband likes nice things & money, so for this kind of money he's ok with me working some shift work, evenings & weekends. I like nice things too, who doesn't! But I just don't know if I want to work full time and especially full time shift work :-/ just thinking about it I feel guilty for everything I would miss out on with my kids!! I guess I could get more info on the position. Oh, and by kind of offered, it's family that bragged on me to another family who does the hiring for their company and is looking for someone dependable & smart for a dispatcher position. Apparently my current boss says I'm smart ;-) and the other person is now interested in offering me the position. Anyway....I had planned on working at the boys school this coming year as a sub & patiently waiting for an office or other school position to open up & throw my name in for it. It wouldn't get more convenient than that. Turns out I'm very boring without them and very lonely. I understand now why some moms continue having kids until their body says "no more". I'm 31 and I have a 9 and 11 yr old. By the time I'm 40 they'll be adults and have their own lives.<br />
But for now, turns out they miss me. The stay was planned for a month at my moms house while we moved and since I'm working part time this summer. Which is entirely too long and had me doubting my parenting abilities, and if I was ruining my family by leaving my children for an entire month. Well, my oldest called last night, he's coming home, the sooner the better and I said "ok" and he passed the phone to my mom and went and packed his bag up. And my heart is happy. My youngest, who I thought would be the first to crack, was frustrated that since his brother is coming home he has to come home also. Little booger!!<br />

In the meantime, I have checked off every item our loan process manager has tasked me with, she has provided new lists with brand spanking new requirements about weekly (grrr) and those have all been completed as well. And I'm thinking, there can't possibly be anything else for us to do so at this point we may be just sitting back and waiting for that July 3rd closing. Everything looks great for an on time closing.<br />

I do not think "for sale by owner" is a reasonable option for pretty much anybody. The house we are buying is FSBO, however their buddies with a realtor who has bee amazing throughout this process. We couldn't have done this without him<br />

A GOOD, no, a GREAT realtor will make your home buying experience. When a great realtor calls those inspectors, those title companies, those banks..etc..those people jump through hoops to accommodate!! This realtor will also be on task and keep every step moving smoothly so that closing will happen on time. Sometimes things happen, but a great realtor will give you the best chance at that on time closing.<br />
<br />
A knowledgeable insurance agency will get your homeowners insurance needs met at the lowest possible cost. Try a local agent that brokers insurance, they can quote you from multiple companies & that means you get the cheapest possible insurance.<br />
<br />

I cooked my bacon, I sat that pot a side but spooned out the clean bacon grease into a cool non stick skillet. I turned the stove on to a medium/low heat and cracked my egg into the grease. I used my spoon to shovel grease on top of the egg while cooking. Once the white was almost done I started spooning grease on to the yoke. Once my yoke "milked" over I used a wide spatula to scoop the egg onto my plate. I dabbed the egg with a paper towel to get rid of excess grease. </div>

You'll need two batches of this, one for the calzones & one for the pizza<br />
<br />
2 1/2 to 3 cups flour (can use a combination of white and whole wheat if you prefer)<br />
1 tablespoon sugar<br />
1 teaspoon salt<br />
1 package (2 1/4 teaspoons) yeast<br />
3 tablespoons olive or vegetable oil<br />
1 cup very warm water<br />
<br />
Combine yeast, sugar, 1 cup of the flour, and salt in a large bowl. Add the warm water and oil and mix. Stir in remaining flour slowly until dough is soft but not sticky. Knead until smooth. Let the dough rest for at least 30 minutes before making the calzone.<br />
I made this pizza crust in my bread machine, set on the dough cycle which takes 1 1/2 hour. I put the ingredients in this order:<br />
water & oil<br />
flour<br />
sugar & salt<br />
use the back of my table spoon to make an indent in the top center & pour my yeast in there<br />
<br />
Options: put a couple of teaspoons of italian seasoning or parmesean cheese in with the sugar & salt. <br />
<br />
Once finished on the dough cycle I floured my counter, dumped out my dough and used my rolling pen to roll out the dough for my baking sheet, rolling a little excess so I could roll the dough around my cheese sticks. <br />
I placed mozzarella cheese sticks end to end along the edges, flopped the excess dough on top, doing my best to tuck & squish the edges closed (I failed, the cheese oozed out, so what). I then poured a little olive oil in a small bowl & tossed in a bit of italian seasoning & brushed this all over my crust, the edges, the center, EVERY WHERE. And I stabbed the bottom of the crust with a fork a few times to prevent bubbling in the bottom.<br />
I cooked on 375* for about 25-30 minutes. <br />

The amounts depend on how much you want. I want left overs so we can have bbq chicken nachos & bbq chicken sandwiches for tomorrow. So I used two packages which is about 6 breasts.<br />
I put about 2 cups BBQ sauce in the bottom of the crockpot & then wash, rinse, cut off any fat or yucky looking chicken pieces & toss in the crockpot, adding about another cup or so of BBQ sauce on top of the chicken.<br />
Cook on high for 3-4 hours. Or low about 6 hours (8 hours always seems too long for anything in my crockpot, but it's old & crotchity, so get to know your crockpot).<br />

This recipe is a new frequent request around here. It's delicious, I control the ingredients, and it seriously could not be easier to whip up a batch. Danny says this tastes like McDonalds packet ketchup, I don't know but either way I'm glad he likes the ketchup :) <span style="font-size: x-large;"><br /></span><br />

Sprinkle on about two handfuls of shredded mozzarella cheese & one handful of parmesean cheese (depending on the size of your pizza)</div>

Crumble up some cooked bacon (mine was leftover from breakfast) and sprinkle on top of the cheese layer.</div>

Place jalapenos across the pizza (I used tamed, code word for seedless & less heat, and let the juice drip off my fork on to the pizza)</div>

Either open a can of diced pineapples or dice up some fresh and place across the pizza.</div>

Sprinkle another few handfuls of mozzarella cheese across the pizza, covering your toppings and another handful of parmesean cheese as well. </div>

I found the above recipe on pinterest. It's now a regular meal on my summer time menus. I look for good crockpot recipes because it doesn't heat up the house like the oven does. <br />
And this recipe couldn't get any simpler. <br />

Ingredients:<br />
1 pack (or 6 pieces) chicken breasts <br />
1 pack taco seasoning (I like my own so I just use 1/4 cup of mine)<br />
1 jar salsa (your favorite<br />

Toss that all in the crockpot, give it a stir & heat on high about 3-4hrs or low 6-8hrs, until your chicken is cooked through. <br />

Serve tacos with flour tortillas, shredded lettuce, diced tomatos, shredded cheese,a dollop of sour cream, and whatever else your family enjoys in their tacos.<br />

He was shocked seeing the blood pooling in his hands and running through his fingers. I was a wreck, having no clue how to help. I didn't even think to tell my poor baby, let that dang blood hit the ground, stop trying to catch it. Fortunately, the coaches wife is a nurse. It's not broken & he's gonna be just fine. But this is, thus far, the worst injury we've had to deal with and boy it was scary! I need first aid classes!!<br />
Trents ball season has ended in first place. I'm so disgusted with his coaches I can't even celebrate. I'm glad he gets the satisfaction of being part of a winning team but I'm more glad his team is just done.<br />
Taylor's (in the picture) team beat their rivals tonight and are now soundly in first place. They still have a few more games but they will finish first. I have been enjoying watching his games, the coach & families have been a joy the past few months. I will miss this group.<br />
Tomorrow we'll get Taylor back outside & work out his glove, try to make sure he doesn't settle into fear of the ball. Get him "back in the saddle" <br />
Not that I'd have been disappointed if he'd freaked & cried, no I'd have understood, but I was so impressed & proud with how tough & how well he handled this incident. I know it has to hurt like the dickens! <br />

At 7:30pm we headed outside to watch the Annular Solar Eclipse. Danny couldn't remember if this was the eclipse that you used a hole in the box to look through, so we tried it. I don't think this was the event for the hole in the box trick, oh well, live and learn. It was about 7:38 when we first saw the moon covering up the bottom right corner of the sun. It looked like it just took a bite out of it down there. Soon after that our sun dropped below the tree/house line and we were unable to see the full eclipse. I bet it was beautiful.<br />
Taylor tried holding leaves up and I think we all made the mistake of looking at the sun with our naked eyes. I for sure did and it took forever to get the spots to go away. HA, again, live & learn!<br />

YAY! Apparently I hired a pervert inspector (ergh!) but hopefully life & this closing will go forward despite his attempts at wooing all female he has come in contact with since I hired him to inspect this house. The nerve of some pervs. Anyway.<br />
I have gathered every single piece of paperwork asked of us, copied, mailed and faxed as needed. I feel like I may have signed away our lives, our freedom, our children and I'm not sure what else filling out all this paperwork. It's intimidating for sure!<br />

Danny's mom broke her ankle and has to have surgery. Right in the middle of her own move! They moved in to their house and that night the a/c went out. It's fixed, but boy talk about stress on top of stress and now this. Tonight we're going to help them move a few more things and I hope to help her arrange some stuff, if she'll allow the help. She's very independent and used to doing things her way, alone. So we'll see.<br />
<br />
And, I got the little yorki adopted out to my mom. Oh, she is loving the little doll! Having the puppy here reminded me just how much responsibility pups are. It's like having babies, or toddlers and the constant care they require. Exhausting!! But rewarding :) But glad the yorki has a home with my mom, they're gonna love each other so much!!<br />
And now I've just heard I may be taking in another unwanted :( So sad. This is a deaf puppy. I'm not sure I can handle that kind of challenge with so much going on. I know I will do whatever I have to do though, as I heard if the dog doesn't get "rescued" it's getting the bullet. I just can't handle that. This is a cur, I believe. My mom is already having a fit, NO MORE DOGS. I have 3. It's not the number of dogs we have, so much as the limitations having many dogs places on you. Everything we do must be dog friendly if it will take more than several hours at a whack in a day. So, no big vacations, not too many camping trips because it's a hassle, no overnighters with family, except mom, she's cool with herds of dogs. But even she is threatening to draw the line with one more addition. Yea right mom, I don't sweat your idle threats <3<br />
I'm wondering, when did I turn into the dog rescuer?? Is this how it happens, someone finds out you're a sap and brings you every lost cause they can find???<br />

School and baseball are wrapping up and I am SO ready!! Well, Taylor will still be continuing with his lessons since I was never able to do any placement for his homeschool curriculum we bought after yanking him out of public school here. The boys have plans to spend a week or so at my moms house the beginning of June. Danny is really looking forward to "a break", I think what he meant was alone time, because let's be real, he doesn't make the meals, get the kids up & ready for school, make lunches, tote kids to and fro, etc etc. Yep, he meant alone time. And I, I will enjoy being selfish and only having to worry about myself & what I need or want, and by mid day one I will be lonely & bored and ready for my little men to be home again. Well, truth be told, I'll miss the heck out of them but I think I am prepared for some selfish time, and if they're with momma they're in very capable, loving, spoiling hands. I still feel guilty at knowing I'm looking forward to time alone...I guess I'll manage, somehow ;)<br />
<br />
Of late, I've had a couple of people tell me they wish they were more like me, because I don't take no crap, or things along the lines of basically I'm not super nice or patient. And all this time I thought I was a super nice push over. I've felt guilty about that and then I talked to a good friend (my cousins wife) and she says "we are nice, but no, we don't take crap from folks but we don't dish it out either so we shouldn't have to take it." I felt like a big breath just wooshed out of me. She's right. It's ok to put people in their place when they are rude to you and try to take advantage of you.<br />
<br />
I'm still working at the rock yard. I guess, as far as jobs go, that's a pretty cool job. I don't "have" to work, and that's always a nice thing to know. But I'm working for Danny's aunt at her business. I've learned to work a fork lift and a whole stinkin lot about rocks! HA! Really, being around the people has been good for me and really brought my personality back to life. I guess it had begun to lay dormant since I was so rarely around people other than my kids & husband, I only knew how to react in the home life. I mean, I was around people, but just didn't have to deal with, or socialize with a lot of various individuals. It's been nice. And I guess this has been part of the experience of me finding out I'm no push over also ;)<br />
Working here has been where I went from trying to do it all for people (including hand loading thousands of pounds of rocks) to realizing sometimes folks need to do things for themselves, or at least help out dad-gum-it. On the up side, I'm definitely a lot stronger than when I started a few months back. I also get a kick out of the looks on peoples faces when they come in to find myself & another female working the stone yard, driving the fork lift, loading pallets & loose materials into truck beds or trailers and handling large, upwards of 100lbs rocks by hand or scooping up boulders with the forks.
